These no-bake raw balls are an amazingly refreshing afternoon treat! They’re filled with such energizing flavors with…you guessed it: lemon, coconut, and ginger! To make these balls, all you need to do is throw the ingredients into a food processor and blend!

The ginger is mild in this recipe, but the lemon and coconut are super flavorful! If you love lemon and coconut as much as I do, then you’ll LOVE these.

An even better bonus is that it’s only 3g of sugar per ball…and the only sweetener in this recipe is from dates!

A lot of times when blending up nuts, you have to soak them beforehand at least a few hours. But not with this recipe! You can just throw them into the food processor raw. No soaking required!

The recipe only has 6 ingredients, making it super easy for everyone to make.

  • Raw macadamia nuts
  • Coconut oil
  • Coconut flakes
  • Medjool dates
  • Fresh ginger
  • Lemon

You will also need a food processor! This is the food processor I use and so far I’m loving it.

How to make Lemon Coconut Ginger Balls:

Like I mentioned before, this recipe is SO EASY. First, just add the raw macadamia nuts to the food processor and blend until creamy. Then, add the rest of the ingredients and blend again until all combined.

Now it’s a bit messy, but you just use your hands to try and form balls. It can be fairly wet and sticky, but that’s what makes the texture so good once it’s been in the fridge.

Once the balls are formed, dip in extra coconut flakes, add lemon shavings, or other toppings if desired!

Place the balls in the freezer for about 15 mins or so until they harden up, then store them in the fridge. You can also store them in the freezer. If you store them in the fridge they will be slightly soft and fudgy (the perfect consistency in my opinion), and if you store in the freezer they will be harder.

Ingredients

Scale
  • 1 1/4 cup raw macadamia nuts
  • 1/2 cup coconut oil
  • 1/2 cup coconut flakes
  • 2 medjool dates (pitted)
  • 1 tbsp chopped ginger
  • Juice and shavings of one small/medium lemon

Instructions

  1. Put raw macadamia nuts in food processor (no soaking required) and blend until creamy.
  2. Then add the rest of the ingredients and blend until combined.
  3. Form to make balls (it will still be pretty wet).
  4. Dip in extra coconut flakes, lemon shavings or other toppings if desired.
  5. Put in freezer for 15 mins, then transfer and store in fridge (can also store in freezer, but the fridge keeps it the perfect moist consistency in my opinion).
