Short on time during the workweek but still want a healthy, filling breakfast? Then these have your name written all over it! What I love about these is that you can just grab a few to-go while running out the door for work, or even eat one as an afternoon snack.

This is also a great way to add colorful veggies to your breakfast and start your day on a positive note! You can add different veggies + herbs every time and it’s always a little different. My favorite mix-ins are onion, bell pepper, any sort of greens, cabbage and fresh cilantro.

You can also add any spices you want or go without. For example, you could start with salt + pepper, and then add some garlic and oregano, or even add nutritional yeast for a cheesy flavor.

If you do decide to add nutritional yeast, this is a great, healthy option because it is one of the few nutritional yeast products that are non-fortified.

What does that mean? Basically, there are no added synthetic vitamins, as many of the nutritional yeasts sold at grocery stores include synthetic B12 and folate. Many believe that synthetic vitamins can be harmful to our health so I personally try to stick to natural sources of vitamins. But feel free to choose whatever option works best for you!

How to Make Breakfast Egg Muffins:

Making these egg muffins is SO easy. First, preheat your oven to 350°F and grease a 12 cup muffin pan with butter or oil so they don’t stick.

Next, decide on your veggies of choice, chop them up, and divide evenly into muffin cups filling up halfway.

Then, whisk up 12 eggs in a bowl and add to cups evenly. There should be a little bit of room left in each cup since it will expand a bit.

Feel free to top with spices or herbs of choice!

Bake in the oven for about 25 mins, let cool and store in the fridge.

Instructions

  1. Preheat oven to 350°F and grease a 12 cup muffin pan with butter/oil.
  2. Chop up veggies of choice and add evenly to muffin cups, filling each cup about halfway.
  3. Whisk 12 eggs together in a bowl and add evenly to muffin cups leaving a little bit of room in each cup.
  4. Top with spices/herbs of choice if desired.
  5. Bake in the oven for about 25 minutes.
  6. Let cool and store in the fridge.
