Strawberry No-Bake Oat Bars

These Strawberry No-Bake Oat Bars are a healthy, refreshing treat and are so delicious. And since strawberry season is fast approaching (April – August), there’s nothing better to have this spring!

And once it starts to get a bit warmer outside, no-bake treats are my absolute favorite! Since no actual baking is involved, they couldn’t be easier.

Ingredients for Strawberry No-Bake Oat Bars:

  • Oats
  • Almond butter (or nut/seed butter of choice)
  • Maple syrup
  • Coconut oil
  • Cinnamon
  • Vanilla extract
  • Fresh strawberries (you could also probably use frozen, but I haven’t tried)

How to Make Strawberry No-Bake Oat Bars:

First, combine all ingredients except for strawberries into a bowl and mix together very well.

Line an 8×8 pan with parchment paper and place half the mix in the pan to form a bottom “crust.” Place in the freezer.

While that is freezing, wash strawberries and cut them into smaller pieces. Cook them on a pan on the stove for about 10 mins at medium heat while mixing around so nothing gets stuck. Let the strawberries get all mushy like jam.

Take the pan out of the freezer and spread mashed strawberries on top.

Ideally, put the pan back in the freezer to let the mashed strawberries freeze a bit (this makes it easier to spread on the top layer). I let it freeze for about 30 mins or so.

Finally, put the second half of the oat mixture over the strawberries as a top layer (it may be easier to do this step with your hands and push it out).

Then freeze again and you’re done!

Once it’s frozen I like to transfer some to the refrigerator to eat within the next day or so and keep the rest in the freezer.

  • 1/2 cup coconut oil, melted
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 lb carton of strawberries

Instructions
