This sweet potato oatmeal bake is so cozy and comforting. There’s something about a warm oatmeal bake that just feels so good in the morning, and the addition of the sweet potato makes it so perfectly soft.

This is perfect for a weekend because this does take more time to make since it requires some time in the oven and a pre-baked sweet potato.

For my oatmeal bake, I added raspberries on top because they are my favorite, but you can add whatever toppings you prefer!

Ingredients for Sweet Potato Oatmeal Bake:

  • Ripe banana
  • Oats
  • Almond milk (or other non-dairy milk of choice)
  • Baked Japanese sweet potato
  • Egg
  • Cinnamon
  • Baking soda
  • Vanilla extract

How to Make Sweet Potato Oatmeal Bake:

Don’t worry, it’s very easy to make! Start by mixing all ingredients together in a bowl, including the pre-baked Japanese sweet potato. If I want to make this oatmeal bake in the morning, I’ll usually bake a potato the night prior and stick it in the fridge. Be sure to take the skin off before you mix it with the other ingredients.

Pour mix into a 9″ x 5″ loaf pan lined with parchment paper. You could also put the mix into two separate ramekins, but the cooking time may vary. Add toppings if desired.

Bake in the oven, let sit for a few minutes, and then serve!

Ingredients

  • 1/2 cup oats
  • 1/2 of baked japanese sweet potato (or about 3/4 cup mashed)
  • 1 egg
  • 1/2 cup almond milk (or other non-dairy milk)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Thoroughly mix all ingredients together in a bowl.
  3. Pour mix into a 9″ x 5″ loaf pan lined with parchment paper. Add toppings if desired.
  4. Bake for 30 mins.
  5. Let sit for a few mins and then serve.
