These coconut macadamia cookies are refreshing and light and only made with healthy, clean ingredients.
Let’s be real, I love chocolate gooey cookies, but sometimes it’s so nice and refreshing to have something a little lighter. These yummy and healthy coconut macadamia cookies are perfect for just that.
Like most of my recipes, these are gluten-free, dairy-free and refined sugar-free! So there’s no need to feel guilty when grabbing one as an evening dessert!
Why Macadamia Nuts?
First off, macadamia nuts are SO TASTY! But they also have a ton of health benefits and I feel like they’re a nut that’s usually ignored and forgotten about. However, I will admit they’re definitely more expensive than must nuts, especially if you buy organic. If you prefer organic like me, I always buy these macadamia nuts from Amazon.
Nutritionally, macadamia nuts are filled with tons of healthy fats and antioxidants and are a great source of vitamins and minerals like vitamin A and iron. They may help lower your risk of heart disease, cancer, and diabetes, as well as protect your brain and prevent weight gain. Sounds good to me!
Ingredients for Healthy Coconut Macadamia Cookies:
- Almond flour
- Coconut flour
- Coconut flakes
- Chopped macadamia nuts
- Ripe bananas
- Coconut sugar
- Eggs
- Vanilla extract
- Ghee
- Baking soda
How to Make Healthy Coconut Macadamia Cookies:
It’s so simple to make! Start out by mixing the ingredients all together in a bowl. Regarding the macadamia nuts, you can chop them very thoroughly or leave them rather chunky. I prefer mine more thoroughly chopped with less large chunks, but you can do whatever you prefer!
Then scoop cookies onto a parchment paper-lined baking sheet. I like to use an ice cream scooper for this step because it makes it a little easier and ensures all of the cookies are even. Then push down each cookie a little bit using a fork or the palm of your hand.
Next, add some coconut flakes to the top of each cookie. I love to add a ton because I’m obsessed with coconut, but feel free to add as much or as little as you want!
Finally, bake in the oven, let cool and enjoy!

Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup coconut flakes (+ more for topping)
- 1/2 cup chopped macadamia nuts
- 2 medium ripe bananas mashed
- 2 tbsp coconut sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1 tbsp ghee
Instructions
- Preheat oven to 350°F.
- Mix all ingredients together in a bowl.
- Scoop into cookies and place on a parchment paper-lined baking sheet. Push each cookie down slightly using a fork or the palm of your hand.
- Top each cookie with a hefty dose of coconut flakes. Feel free to use as much as you want!
- Bake for 10 mins.
- Let cool and enjoy!
