These easy roasted carrots are a healthy and delicious side to any meal. Tons of nutrition, but little effort!

Ingredients

  • Carrots
  • Avocado oil or olive oil
  • Balsamic vinegar
  • Sea salt
  • Black pepper
  • Thyme
  • Garlic powder
  • Parsley (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and peel the carrots and lay them on a parchment paper-lined pan.
  3. Coat carrots with avocado oil (or olive oil) and balsamic vinegar using a 1:1 ratio.
  4. Top carrots generously with all the spices.
  5. Bake for about 50 mins, depending on how thick the carrots are and how cooked/soft you want them.
  6. Top with fresh parsley and enjoy!
