These sweet potato fudge brownies are SOOO yummy. So fudgy, so MOIST, so delicious, and made with clean ingredients!

1.5 cups mashed japanese sweet potato
3 eggs
3/4 cup coconut sugar

Instructions

Preheat the oven to 350°F.
Mix ingredients together in a bowl and pour into a parchment paper-lined 8″ x 8″ pan.
Bake for 30 mins, but halfway through cooking top the brownie mix with additional chocolate chips and coarse sea salt if desired.
