Sweet Potato toast is a healthy and unique gluten-free breakfast option that you can make to switch things up. And it’s so delicious, too!

  1. Preheat the oven to 350°F.
  2. Wash and chop sweet potato into toast slices (about 1/4″ thick).
  3. Coat each slice lightly with avocado oil.
  4. Lay the slices on a baking sheet, bake for 20-25 mins, and then finish with a 5 min broil.
  5. Let cool a bit, then add on toppings of choice, and enjoy!
