Do you want to know what I’m most proud of in life? It’s probably making these Mint Chocolate Chip Cookie Dough Balls. These are LIFE CHANGING! Not to mention this recipe is super clean, has minimal ingredients and is so easy to make!
I’ve made these so many times and they’re always a huge crowd-pleaser.
These sweet little treats are free of gluten and dairy, are vegan and don’t require any baking! They’re also refined sugar-free if you choose the right chocolate chips.

Ingredients for Mint Chocolate Chip Cookie Dough Balls:
- Cashew butter – I use Artisana Organics
- Almond flour
- Coconut flour
- Maple syrup
- Peppermint extract
- Sea salt
- Chocolate chips
If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free/vegan, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Mini Chocolate Chips which are dairy-free/gluten-free/vegan, but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.
How to Make Mint Chocolate Chip Cookie Dough Balls:
Since these balls are no-bake, there’s no cooking required, but you will need a food processor. This is the food processor I’ve used for a while and I really love it – it’s pretty affordable and works great.
To make these balls, put all ingredients into a food processor except for the chocolate chips and blend until mixed together. Then add the chocolate chips and just mix it around with a spoon until they are distributed evenly. Don’t use a food processor to mix in the chocolate chips or else they will get all chopped up!
Now form the mix into balls by scooping up some of the mix using an ice cream scooper and then rolling it around in the palm of your hands to make a ball.
Then enjoy!
I store mine in the fridge but they should be fine sitting out on the counter for a few days as well.

Ingredients
- 1 cup cashew butter
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 1/2 tsp peppermint extract
- 1/8 tsp sea salt
- Heaping 1/4 cup chocolate chips (or more if you want!)
Instructions
- Put all ingredients except for chocolate chips into food processor and blend until mixed together.
- Then add the chocolate chips and just mix it around with a spoon until they are distributed evenly (don’t use food processor for this).
- Form into balls (I used an ice cream scooper to help).
Notes
Can be left out on the counter for a few days but probably best stored in the fridge.
