Yes, I’m one of those girls that try to make everything pumpkin-flavored once Fall rolls around. I absolutely love the taste of pumpkin…it just brings me so many cozy and comforting feelings. So I had to make some healthy pumpkin granola!
But pumpkin is also so healthy for you, too! It’s really high in Vitamin A, fiber and antioxidants and just overall has a ton of nutritional value. And according to Chinese medicine (which I find incredibly fascinating), pumpkin is especially good for you during the cold and dry fall and winter months, as it’s known to be moistening and warming.
So be like me and put pumpkin in everything…and start by making this healthy pumpkin granola!
Because I added real pumpkin puree to this recipe and didn’t just use pumpkin spice, this granola isn’t super crunchy and hard. Instead, it’s a little bit softer but absolutely still so delicious.
When I made this recipe for the first time, I honestly ate most of this on its own as a little afternoon snack. But it would also be so great on top of yogurt or mixed into your morning oatmeal bowl.

Ingredients for Healthy Pumpkin Granola:
- Oats
- Almonds
- Shredded coconut
- Pumpkin puree
- Maple syrup
- Coconut oil (I melted mine to make it easier to mix together)
- Pumpkin spice
- Sea salt
How to Make Healthy Pumpkin Granola:
Making granola is extremely simple and straightforward. Just start by preheating your oven and then mixing all of the ingredients together in a bowl. To make it easier, I melted the coconut oil first before I added it to the bowl so I could easily mix it around.
Then spread the mixture out on a parchment paper-lined pan and bake in the oven! It’s that easy!

Ingredients
- 1 cup oats
- 1/4 cup almonds
- 1/4 cup shredded coconut
- 1/4 cup pumpkin
- 3 tbsp maple syrup
- 2 tbsp coconut oil
- 1.5 tsp pumpkin spice
- Pinch of sea salt
Instructions
- Preheat the oven to 350°F.
- Mix all of the ingredients together in a bowl.
- Spread the mix onto a parchment paper-lined pan.
- Bake for about 18 mins.
