A healthy and wholesome no-bake treat. Gluten-free, dairy-free, and refined sugar-free!

Ingredients

  • 1/3 cup pumpkin puree⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 cups pecans⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4 cup coconut flakes⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4 cup coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 5 medjool dates, pitted⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/21 tsp pumpkin spice, depending on how strong you like it⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Optional for toppings, if desired: chocolate chips + coarse salt⠀

Instructions

  1. Blend all ingredients in a food processor until combined.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  2. Add mix to a 9″ x 5″ loaf pan with parchment paper and spread out so it’s all even. Add chocolate chips and coarse salt if desired.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  3. Put in the freezer for 1-2 hours, chop into squares and then it’s ready to go!

Notes

You can keep in the freezer or if you like it softer you can keep in the fridge.
