There’s something so special about pancakes…especially after sleeping in on a weekend. There’s no better feeling! And it’s even better when the pancakes don’t make you feel like crap! These Cinnamon Apple Cassava Pancakes are gluten-free, dairy-free and refined sugar-free and made with only clean, simple ingredients.

As you probably noticed by the title, these are made with cassava flour. I love baking with cassava flour! I personally really enjoy the taste and I think it’s one of the best flours for making pancakes. However, I’ve noticed it’s harder to find organic cassava flours at the grocery store. If that’s important to you, this one and this one are ones I’ve found on Amazon.

This recipe makes 7 pancakes, but pancakes made with cassava flour are generally thicker and heavier than pancakes made with other flours. When my husband and I make this for the morning, 7 is the perfect amount to split between the two of us!

I love to top mine with sautéed cinnamon apples and nut butter as pictured – it’s the ultimate cozy combo! If you want to top it like this, just chop up an apple or two into bite-size chunks and cook it on the stove in some healthy oil. I usually use ghee or butter, but coconut oil is also so yummy here. I’ve also even used avocado oil and it still tasted great. Then add lots of cinnamon! It only takes about 5 minutes or so to cook.

Ingredients for Cinnamon Apple Cassava Pancakes:

  • Cassava flour
  • Baking powder
  • Sea salt
  • Cinnamon
  • Non-dairy milk of choice
  • Eggs
  • Unsweetened applesauce
  • Melted butter or ghee

How to Make Cinnamon Apple Cassava Pancakes:

Start by mixing all of the dry ingredients in a bowl, and then adding the wet ingredients. Let sit for about 5 minutes.

Cook pancakes like usual and top with sautéed cinnamon apples and nut butter if desired. To make similar size pancakes, I used a 1/3 measuring cup to measure the batter.

Ingredients

Scale
  • 1 cup cassava flour
  • 1/2 tbsp baking powder
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 1 cup nut milk
  • 2 eggs
  • 2/3 cup unsweetened applesauce
  • 1 tbsp melted butter or ghee

Instructions

  1. Mix ingredients together in a bowl by first mixing the dry ingredients then adding the wet. Let sit for 5 mins.
  2. Cook pancakes as usual. I used a 1/3 measuring cup to measure the batter for each pancake.
  3. Top with cinnamon sautéed apples and nut butter if desired, or whatever toppings you prefer!
