A fudgy peppermint cookie made with only clean ingredients!

Ingredients

1 cup natural, runny nut butter – I usually use almond or cashew butter
1/2 cup coconut sugar
1 egg
1 tbsp cacao powder
1/2 cup chocolate chunks
1/2 tsp peppermint extract
Instructions
Preheat the oven to 350°F.
Mix all of the ingredients together in a bowl.
Form mix into cookies and place on a parchment paper-lined baking sheet.
Bake for about 10-12 mins.
If desired, sprinkle coarse salt on top for some added fun!
Notes
Be sure to let cool for a little bit before eating – since they are flourless, they need some time to “harden” up after the oven. Let cool completely before you store them.
