Preheat oven to 400°F.
Wash and cut sweet potato into 1/4” slices. Place onto parchment paper lined baking sheet, coat with a little bit of avocado oil, salt and pepper.
Bake for 15 mins. Flip potatoes, then bake for another 10 mins, for a total of 25 mins.
When the sweet potatoes are done, mash up avocado and mix with a little bit of olive oil, salt and pepper. You can also add lemon too to make it stay greener longer and have a fresh citrus taste. I recommend this if it will be sitting out at a party for a while.
Add a spoonful of avocado to each sweet potato round, and then add a sprinkle of goat cheese (can omit if dairy-free) and pomegranate seeds.
