A healthy and unique muffin made with only wholesome ingredients!
Yummm I love these delicious muffins. I wanted to make something that had a more unique flavor and these turned out so tasty! These cassava cranberry orange muffins are a more uncommon combo but go so well together.
As you probably noticed by the title, these are made with cassava flour. I love using cassava flour and if you haven’t tried baking with it then you must! I really enjoy the taste and consistency. However, I’ve noticed it’s harder to find organic cassava flours at the grocery store. If that’s important to you, this one and this one are ones I’ve found on Amazon.
Ingredients for Cassava Cranberry Orange Muffins:
- Eggs
- Ghee, melted (or butter)
- Juice and zest from oranges
- Coconut sugar
- Cassava flour
- Baking soda
- Dried cranberries
How to Make Cassava Cranberry Orange Muffins:
Start by preheating the oven and lining a muffin pan with liners or greasing it with a healthy oil like coconut oil. Then mix all of the ingredients together in a bowl, except for cranberries. Then add cranberries to the batter and gently mix again.
Scroop the batter into the muffin pan and top each muffin with more cranberries and as much orange zest as desired! I personally love to add a lot!
Bake in the oven and enjoy!

Ingredients
- 3 eggs
- 1/2 cup ghee, melted
- 3/4 cup juice from an orange – was about 2 oranges
- 1/2 cup coconut sugar
- 1 cup cassava flour
- 1 tsp baking soda
- 1 cup dried cranberries
- Optional: orange zest for topping
Instructions
- Preheat oven to 350°F.
- Mix all ingredients together in a bowl except for cranberries. Then add cranberries to the batter and gently mix again.
- Scoop batter into lined muffin tin, then top each muffin with more cranberries and orange zest if desired.
- Bake in the oven for 18 mins.
Notes
The orange flavor in the batter is mild, so be sure to add a lot of orange zest if you want it stronger.
