A healthy and unique muffin made with only wholesome ingredients!

Ingredients

  • 3 eggs
  • 1/2 cup ghee, melted
  • 3/4 cup juice from an orange – was about 2 oranges
  • 1/2 cup coconut sugar
  • 1 cup cassava flour
  • 1 tsp baking soda
  • 1 cup dried cranberries
  • Optional: orange zest for topping

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a bowl except for cranberries. Then add cranberries to the batter and gently mix again.
  3. Scoop batter into lined muffin tin, then top each muffin with more cranberries and orange zest if desired.
  4. Bake in the oven for 18 mins.

Notes

The orange flavor in the batter is mild, so be sure to add a lot of orange zest if you want it stronger.
