Preheat the oven to 400°F.
Wash and cut sweet potato into rounds. Coat with avocado oil, salt and pepper, and garlic powder and rosemary if desired.
Lay on a baking sheet and bake in the oven for 25 mins, flipping halfway.
While the sweet potatoes are cooking, cook the ground beef into small buns however you like. I did it by forming the ground beef into patties, sprinkling with s+p, and then cooked on the stovetop on medium in a little bit of healthy oil – 3 mins on one side then cooked for about 10 mins on the other side.
Then put it all together with veggies and sauce of choice.
