A deliciously soft and fudgy blondie, made with healthy, wholesome ingredients!

Ingredients

Scale
  • 1.5 cups almond flour
  • 1.5 cups mashed japanese sweet potato (or regular sweet potato but japanese is best!)
  • 3/4 cup coconut sugar
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 3 eggs
  • 1 tbsp melted ghee (or butter)
  • 1/2 tsp vanilla extract
  • Heaping 1/2 cup chocolate chips (or more if you want) and more for topping if desired

Instructions

  1. Preheat the oven to 350°F.
  2. Mix all ingredients together in a bowl and pour into a parchment paper-lined (or greased) 8″ x 8″ pan.
  3. Bake for about 25 mins or until a toothpick comes out clean.
  4. Top with coarse salt if desired and enjoy!
