Deliciously moist and tasty oatmeal muffins made with only simple, healthy ingredients.

Ingredients

  • 3 ripe medium bananas, mashed
  • 2.5 cups old fashioned rolled oats
  • 1/2 tsp baking soda
  • 3 cups almond milk or other dairy-free milk
  • 2 tbsp maple syrup
  • 2 eggs
  • 1/2 cup chocolate chips
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F and grease two muffin pans with coconut oil or another healthy oil.
  2. Mix ingredients together in a bowl.
  3. Pour mix into greased muffin pans and add additional chocolate chips and banana slices if desired.
  4. Bake for 30-35 mins or until a toothpick comes out clean.
  5. Let cool and enjoy!

Notes

Note that that batter comes out very “liquidy,” but it bakes great and that’s why these muffins end up being so soft and moist.

This is a large recipe! This made about 14-15 large muffins, but honestly, they’re so good I suggest making that many and just storing them in the fridge or freezer if you need to!
