Who doesn’t love pancakes!? They’re just such a cozy and comforting brunch staple, but unfortunately, they aren’t the healthiest. Normal pancakes usually make me feel like I need to spend the next 5 hours in bed (bloated and nauseous), but because this recipe is so simple and clean, they make me feel like a million bucks! These Healthy 2 Ingredient Pancakes are only made with ripe mashed banana and eggs…nothing else. But I usually like to add a hefty dose of cinnamon, too!

I know it sounds a little weird, but you just have to try these and see for yourself! Because it’s only made with bananas and eggs, the texture is not quite the same – these are thin (almost crepe-like) and not fluffy. But the taste is still amazing for how clean and simple these are.

I love to top mine with fresh fruit, a drizzle of nut butter, and some maple syrup!

Ingredients for Healthy 2 Ingredient Pancakes:

  • Ripe bananas
  • Eggs

Although you don’t need to, I always add in cinnamon and recommend it if you have it! Sometimes I’ll also add in some chocolate chips, chopped blueberries, or other fun mix-ins!

How to Make Healthy 2 Ingredient Pancakes:

Start by mashing down the ripe bananas very well, then add in the eggs and mix together well. If you want to add in cinnamon or anything else, add this in now, too.

Now all you have to do is make pancakes like usual. However, here is an important tip: this batter makes it harder to flip the pancakes, so keep these nice and small and you shouldn’t have a problem!

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 4 eggs

+ cinnamon or any other extras you prefer!

Instructions

  1. Mash bananas thoroughly in a bowl, then add in eggs and mix together.
  2. Add in cinnamon (or other mix-ins) if desired and mix again.
  3. Make pancakes like usual (These pancakes are runnier and harder to flip so I suggest you make them small).
  4. Serve with your favorite toppings and enjoy!

Notes

This recipe makes about 9 small pancakes. If I’m just eating this alone for breakfast, I’ll eat the whole thing (they are small and thin). If I’m eating them with something else, then I’ll normally split these with my husband.
