Here’s some healthy pancakes but in muffin form – so I like to call them pancake puffs! These Banana Chocolate Chip Pancake Puffs are such a perfect to-go option to meal prep and eat throughout the week!

Gluten-free, dairy-free, refined sugar-free, and made with simple, clean ingredients!

These are sweetened with only ripe bananas and chocolate chips. If you want to make these even healthier, you can omit the chocolate chips to lower the sugar content.

Ingredients for Banana Chocolate Chip Pancake Puffs:

  • Ripe bananas
  • Eggs
  • Almond flour
  • Cinnamon
  • Baking soda
  • Chocolate chips

If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.

How to Make Banana Chocolate Chip Pancake Puffs:

These are so simple to make! Start by preheating the oven and then greasing a muffin tin with coconut oil or other healthy oil.

Then mash the ripe bananas down in a bowl so they are well-mashed. Add the rest of the ingredients to the bowl and mix everything together thoroughly. Add the mix to a muffin pan, filling them each about 1/2 to 3/4 full. Bake in the oven and enjoy!

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 6 eggs
  • 1 tsp cinnamon
  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 chocolate chips + more for topping

Instructions

  1. Preheat the oven to 350°F and grease a muffin pan with coconut oil or other healthy oil.
  2. Mash the bananas thoroughly in a bowl then add all of the other ingredients and mix together.
  3. Pour mix into muffin pans about 1/2 to 3/4 of the way full and top with more chocolate chips (as much as you want!).
  4. Bake for about 18 mins or until cooked through.
  5. Enjoy!
