Yummm these are so delish! Breakfast potatoes are such a comforting way to start the day and they never disappoint. Of course, you can eat these for any meal, not just breakfast!

These potatoes are seasoned with chipotle and paprika so there’s a little beat of heat! I think it’s the perfect amount, but of course, you can adjust to your liking and add more or less depending on your desired result.

By the way, if you’re a big fan of chipotle, you must try this Dairy-Free Chipotle Cream Sauce…it’s addicting and you can basically put it on whatever and it adds such a good flavor!

I love to serve my breakfast potatoes with some eggs, greens, and fruit for a hearty well-rounded meal!

Ingredients for Spicy Chipotle Breakfast Potatoes:

  • Fingerling potatoes (or whatever potatoes you prefer)
  • Onion
  • Bell pepper
  • Avocado oil
  • Spices: sea salt, black pepper, chipotle, garlic powder, paprika

How to Make Spicy Chipotle Breakfast Potatoes:

These breakfast potatoes are simple to make, they just take about an hour.

Start by preheating the oven and then washing and chopping the potatoes into bite-size pieces and adding to a large bowl. Then wash and chop the onion and bell pepper and add to the bowl, along with the avocado oil and all of the spices. Mix together well.

Spread the potato mixture out onto a large baking sheet. I usually use parchment paper as well for easier cleanup, but it’s not necessary! I use this parchment paper since it’s not bleached and chlorine-free.

Bake in the oven for about 25 mins, toss around, then bake for another 15 mins.

After the potatoes are done baking, turn on the broiler for about 5 mins to make the outsides a little crispy. This step is optional as it’s not necessary, but it does make it a little crispier which I personally prefer! Totally up to you! Just be sure to watch carefully while you do this, as they can go from perfectly crispy to burnt very quickly!

Serve as part of your meal and enjoy!

Ingredients

Scale
  • 1.5 lb bag of fingerling potatoes (or any potatoes you prefer)
  • 1/2 cup onion, finely chopped (about 1/41/2 of a large onion)
  • 1/2 cup bell pepper, chopped (about 1/2 a bell pepper)
  • 1 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/2 tsp chipotle
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and chop potatoes into bite-size pieces (try to make all pieces around the same size) and add to a bowl.
  3. Then wash and chop onion and bell pepper and add to bowl, along with the avocado oil and spices.
  4. Mix everything together thoroughly.
  5. Spread the potato mixture out on a large baking sheet (I usually use parchment paper for easier clean up!)
  6. Bake for 25 mins, toss around, then bake for another 15 mins.
  7. Then toss around again and finish with a broil for about 5 mins. Make sure you watch while this happens as they can burn quickly, but this step makes them extra crispy on the outside. If you want to make this easier, you can skip this step.
  8. Serve and enjoy!
