A true breakfast classic, but gluten-free and clean ingredients!
There’s truly nothing better than chocolate chip pancakes! Especially when they are gluten-free, dairy-free, and refined sugar-free! These Chocolate Chip Cassava Pancakes are incredibly easy to make, so delicious, and made with only 8 simple ingredients!
As you probably noticed by the title, these are made with cassava flour. I love baking with cassava flour! I personally really enjoy the taste and I think it’s one of the best flours for making pancakes. However, I’ve noticed it’s harder to find organic cassava flours at the grocery store. If that’s important to you, this one and this one are ones I’ve found on Amazon.
This recipe makes 6-7 pancakes, but pancakes made with cassava flour are generally thicker and heavier than pancakes made with other flours. So with that said, these pancakes are THICK!
And, of course, if you wanted to leave out the chocolate chips and make them plain, you can easily do that as well.
Ingredients for Chocolate Chip Cassava Pancakes:
- Cassava flour
- Coconut sugar
- Baking powder
- Sea salt
- Nut milk (or whatever kind of dairy-free milk you prefer – I used my homemade pecan milk)
- Eggs
- Melted butter or ghee
- Chocolate chips
If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.
How to Make Chocolate Chip Cassava Pancakes:
Start by mixing all of the dry ingredients, except for chocolate chips, in a bowl, and then adding the wet ingredients and mixing again.
Then add in as many or as little chocolate chips as desired and let sit for about 5 minutes. Note that the batter will thicken up a lot and will be much less runny than normal pancake batters – this is what makes them so thick!
Cook pancakes like usual and top with any fun toppings you prefer! I usually like to keep mine simple with butter and maple syrup, but this would be so good with fresh strawberries, too! To make similar size pancakes, I used a 1/3 measuring cup to measure the batter.
A note about cooking these pancakes: I personally make pancakes in a large pan on the stove. Because these are so thick, I like to put the top of the pan on while it’s cooking to ensure the inside get’s thoroughly cooked. If you’re cooking your pancakes on the stove, I suggest you do the same!

Ingredients
- 1 cup cassava flour
- 1 tbsp coconut sugar
- 1/2 tbsp baking powder
- 1/4 tsp sea salt
- 1 cup nut milk
- 2 eggs
- 2 tbsp melted butter or ghee
- Chocolate chips, as much or as little as you want!
Instructions
- Mix ingredients together in a bowl by first mixing the dry ingredients (except chocolate chips) then adding the wet.
- Then mix in as many chocolate chips as desired. Let sit for 5 mins.
- Cook pancakes as usual. I used a 1/3 measuring cup to measure the batter for each pancake.
- Serve and enjoy!
Notes
Note that the batter is very thick. This makes the pancakes very thick, dense and so yummy!
