A true breakfast classic, but gluten-free and clean ingredients!

Ingredients

  • 1 cup cassava flour
  • 1 tbsp coconut sugar
  • 1/2 tbsp baking powder
  • 1/4 tsp sea salt
  • 1 cup nut milk
  • 2 eggs
  • 2 tbsp melted butter or ghee
  • Chocolate chips, as much or as little as you want!

Instructions

  1. Mix ingredients together in a bowl by first mixing the dry ingredients (except chocolate chips) then adding the wet.
  2. Then mix in as many chocolate chips as desired. Let sit for 5 mins.
  3. Cook pancakes as usual. I used a 1/3 measuring cup to measure the batter for each pancake.
  4. Serve and enjoy!

Notes

Note that the batter is very thick. This makes the pancakes very thick, dense and so yummy!
