Ingredients for Lemon Blueberry Muffins:
- Eggs
- Maple syrup
- Avocado oil
- Vanilla extract
- Lemon juice
- Almond flour
- Baking soda
- Lemon zest
- Blueberries
How to Make Lemon Blueberry Muffins:
Start by preheating the oven to 350°F and greasing a muffin pan with a healthy non-stick oil or use liners.
Add the wet ingredients to a bowl and mix together. Then add the dry ingredients, except for blueberries, and mix again.
When everything is mixed together, then add the blueberries and gently mix together with a spoon.
Add the muffin mix to the muffin pan, while ensuring the blueberries are spread out equally. If the blueberries end up all clumped together, the muffins will get soggy. Top with more blueberries and lemon zest if desired!
Bake in the oven, let cool, and enjoy!

Ingredients
- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup avocado oil
- 1/2 tsp vanilla extract
- 4 tbsp lemon juice
- 1.5 cups almond flour
- 1/2 tsp baking soda
- Zest of one medium lemon
- 1/2–1 cup blueberries
Instructions
- Preheat oven to 350°F and grease muffin tins or use liners.
- Mix wet ingredients together in a bowl.
- Then add the dry ingredients, except for blueberries, and mix again.
- When everything is mixed, then add the blueberries and gently mix together with a spoon.
- Add muffin mix to muffin tins and top with additional blueberries + lemon zest if desired.
- Bake for 20 mins.
- Let cool a bit and enjoy!
