Refreshing and healthy lemon blueberry muffins that are so perfect for the morning or an afternoon snack. Made with only the best ingredients!

- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup avocado oil
- 1/2 tsp vanilla extract
- 4 tbsp lemon juice
- 1.5 cups almond flour
- 1/2 tsp baking soda
- Zest of one medium lemon
- 1/2–1 cup blueberries
- Preheat oven to 350°F and grease muffin tins or use liners.
- Mix wet ingredients together in a bowl.
- Then add the dry ingredients, except for blueberries, and mix again.
- When everything is mixed, then add the blueberries and gently mix together with a spoon.
- Add muffin mix to muffin tins and top with additional blueberries + lemon zest if desired.
- Bake for 20 mins.
- Let cool a bit and enjoy!
