I’m in love with all kinds of potatoes – if you put them on my plate, I’ll happily eat them ALL! But these Creamy Basil Potatoes are one of my favorites. It’s still an incredibly simple recipe, but just with a little added flair and flavor.

You can eat these potatoes for breakfast, lunch or dinner, or even steal some from the fridge as a little afternoon snack. I love to pair these with some fried eggs and some fruit in the morning and it keeps me full for hours.

In this recipe, I used russet potatoes, but feel free to use whatever potatoes you prefer!

This recipe is also perfect to meal prep for the week ahead since it keeps well in the fridge for at least a few days.

Ingredients for Creamy Basil Potatoes:

  • Potatoes
  • Butter/ghee/avocado oil or other healthy oil
  • Spices: sea salt, black pepper, and garlic powder
  • Dairy-free mozzarella
  • Fresh basil

For the dairy-free mozzarella, I use Miyoko’s Creamery and I’m in love with it! It’s one of the cleanest vegan cheeses I’ve found. Of course, you could use real cheese, too, or another dairy-free cheese you like! Oh, and also I do feel like I need to mention, this is not a sponsored post – I just love Miyoko’s Creamery!

How to Make Creamy Basil Potatoes:

Start by washing your potatoes and chopping them into bite-size pieces. You can use whatever kind of potatoes you prefer, but for this recipe, I used russet potatoes.

Add the chopped potatoes to a large 12-inch pan on the stove along with the butter (or whatever healthy oil you choose). Turn the pan onto high and mix the butter and potatoes together and keep mixing around gently for about 5 minutes while the pan stays very hot.

Then set the stove heat to medium-low, add the sea salt, black pepper, and garlic powder, and mix again. Place the top on the pan and let cook for about 15 minutes, while mixing every 5 minutes or so. Depending on the thickness of your potatoes and the type of potatoes you use, you may need to cook for more or less time. The potatoes are ready whenever they are soft.

Now add the dairy-free mozzarella and place the top back on the pan for 2 minutes to let the mozzarella melt. Once it’s slightly melted, mix together.

Turn off the heat, add the fresh basil, mix one last time, and now it’s ready to go!

Ingredients

  • 6 heaping cups chopped potatoes
  • 2 tbsp butter/ghee/avocado oil – you just need enough to oil the pan and coat the potatoes
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 cup chopped/shredded dairy-free mozzarella – I use Miyoko’s Creamery (or use as much as you want!)
  • 1/4 cup chopped fresh basil (fresh is the key!)

Instructions

  1. Wash and chop potatoes and add to a large 12-inch pan on the stove.
  2. Add butter to the pan, turn on high and cook while continuously stirring for about 5 minutes.
  3. Then set to medium-low, add sea salt, black pepper, and garlic powder. Mix together.
  4. Put the top on the pan and let cook for 15 minutes, while mixing every 5 minutes or so.
  5. Add dairy-free mozzarella, place the top back on for 2 minutes to let it melt, then mix together.
  6. Turn off the heat, add fresh basil, mix again, and serve!
