There’s nothing quite like ice cream on a hot summer day – it’s so nostalgic and refreshing. But unfortunately, it’s packed with ingredients I usually choose to avoid. I decided to create my own “nice cream” of my absolute favorite ice cream flavor – mint chip!! This Mint Chip Nice Cream is dairy-free, of course, and also refined sugar-free if you choose the right chocolate chips.

This delicious treat is made with frozen bananas as the base. Needless to say, it doesn’t taste exactly the same as ice cream – you definitely can’t replicate that amazing texture and flavor without all that sugar and cream. BUT…this is a pretty delicious replacement!

Ingredients for Mint Chip Nice Cream:

  • Frozen overripe bananas
  • Coconut cream
  • Peppermint extract
  • Chocolate chips
  • Sea salt
  • Spirulina (this is just for color – you can omit if you don’t care about the color)

Before you make this recipe, make sure you have some overripe bananas (the riper the better!), slice them up, and store them in the freezer overnight.

If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.

If you’d like to make it even healthier, you can swap the chocolate chips for cacao nibs, but I personally prefer the sweetness of the chocolate chips.

How to Make Mint Chip Nice Cream:

You need a food processor or a high-powered blender for this recipe. I have this food processor – it’s affordable and has worked amazingly well.

Once you’ve frozen your bananas for at least several hours (overnight is best), you’re ready to go! Add everything to the food processor, except for the chocolate chips, and blend together until well mixed.

Now add the chopped chocolate chips to the nice cream and mix around with a spoon. You don’t turn on the food processor for this, as it will just blend it all together.

Once the chocolate chips are mixed in, if it’s still cold enough (since the food processor can heat it up and melt it), serve right away and enjoy! If it’s melted, freeze until frozen.

To be honest, I love to enjoy this as a milkshake style treat right when it’s done. I think it’s so delicious!

Ingredients

Scale
  • 3 small/medium bananas chopped and completely frozen
  • 2 5.4 fl oz can of coconut cream (in between 1.251.5 cups)
  • 1/2 tsp peppermint extract
  • Pinch of sea salt
  • Large pinch of spirulina – only for color so you can omit if you want to
  • 1/2 cup chocolate chips, chopped

Instructions

  1. Add everything to food processor except for chocolate chips. Mix until smooth and creamy.
  2. Then add chopped chocolate chips and mix together with a spoon! Not the food processor.
  3. Serve if cold enough (the food processor heats it up), or place back into the freezer until colder. You can also serve this as a milkshake and it’s absolutely delicious this way!
