These yummy Gluten-Free Cinnamon Date Muffins bring me back to my childhood days where my mom would bring home the Costco size pack of cinnamon rolls and it would be the BEST DAY EVER. Those were the days. These muffins are reminiscent of a cinnamon roll (without the icing of course) but in a healthy, clean-ingredient, muffin form!

My favorite way to enjoy them is fresh out of the oven when they’re warm and the dates are all gooey inside. But don’t worry, they’re tasty when they’re cold, too.

  • Eggs
  • Avocado oil
  • Coconut sugar
  • Oat flour
  • Cinnamon
  • Pitted and chopped dates
  • Baking soda

How to Make Gluten-Free Cinnamon Date Muffins:

Start by preheating the oven and greasing a muffin pan with coconut oil or other healthy, non-stick oil.

In a bowl, mix together the only wet ingredients: eggs and avocado oil. Now add in the coconut sugar, oat flour and cinnamon and mix again.

Once that’s mixed, add in the chopped dates and baking soda and mix thoroughly.

Pour the mix into the muffin pan while ensuring the chopped dates are spread out evenly between muffins. Top with more cinnamon and coconut sugar if desired!

Bake and then enjoy them fresh out of the oven!

Ingredients

Scale
  • 4 eggs
  • 1/2 cup avocado oil
  • 1/2 cup coconut sugar
  • 2 cups oat flour
  • 1 tsp cinnamon
  • 1 cup pitted and chopped dates (or as much or as little as you want)
  • 1/2 tsp baking soda

Instructions

  1. Preheat the oven to 350°F and line or grease a muffin pan.
  2. In a bowl, mix together the eggs and avocado oil.
  3. Then add in coconut sugar, oat flour, and cinnamon and mix again.
  4. Then finally add in the chopped dates and baking soda and mix thoroughly.
  5. Pour mix into muffin pan. Make sure the dates are equally spread out between the muffins. Top with more cinnamon and coconut sugar if desired!
  6. Bake for about 17-18 mins or until a toothpick comes out clean.
  7. Enjoy them fresh out of the oven as I think they’re tastiest warm!
