When these muffins are warm and fresh out of the oven, they’re perfectly gooey + delicious, and taste just like a cinnamon roll! But don’t worry, they’re good cold, too.

Ingredients

4 eggs
1/2 cup avocado oil
1/2 cup coconut sugar
2 cups oat flour
1 tsp cinnamon
1 cup pitted and chopped dates (or as much or as little as you want)
1/2 tsp baking soda
Instructions
Preheat the oven to 350°F and line or grease a muffin pan.
In a bowl, mix together the eggs and avocado oil.
Then add in coconut sugar, oat flour, and cinnamon and mix again.
Then finally add in the chopped dates and baking soda and mix thoroughly.
Pour mix into muffin pan. Make sure the dates are equally spread out between the muffins. Top with more cinnamon and coconut sugar if desired!
Bake for about 17-18 mins or until a toothpick comes out clean.
Enjoy them fresh out of the oven as I think they’re tastiest warm!
