Is there anything better than tacos? I’m not so sure. They’re delicious and you get to eat with your hands, so what could be better!? If you’re a big taco fan like me, then you must try these super easy Pineapple Chicken Tacos.

In this recipe, I don’t use specific measurements since you can choose how much or little you want on each taco – it’s totally up to you! This is more just a general guide on how to make the best tacos ever.

These tacos are packed with tons of nutrients and are incredibly healthy, but I’m pretty sure even kids would eat them up happily. This recipe would also be great with salmon if you love that more!

Ingredients for Pineapple Chicken Tacos:

  • Tortillas of choice – I used Siete Cassava Tortillas (they are gluten-free and so yummy)
  • Kite Hill Chive Cream Cheese – sounds weird but it’s an amazing combo I promise. This spread is dairy-free. If you don’t have this or can’t find it, you could use regular cream cheese or just do guacamole instead!
  • Greens of choice
  • Red cabbage
  • Pineapple
  • Chicken – I used chicken thighs, but you can use whatever you want. Or you can use salmon!
  • Avocado
  • Fresh cilantro

How to Make Pineapple Chicken Tacos:

These are super easy to make, but just require a lot of simple steps! First, start out by cooking your chicken as usual. This is also a really great way to use up any chicken leftovers!

When the chicken is cooking, wash and chop the cabbage and sauté it in a pan on the stove for about 5-10 minutes. Or if you prefer to eat it raw, you could do that, too!

Now cut the pineapple up into small bite-size pieces.

Once the chicken and cabbage are cooked to your liking, heat up your tortillas on the stove. This usually only takes about 2 or 3 minutes.

Now it’s time to start assembling the tacos: slather a taco with the chive cream cheese, now add greens, chicken, cabbage, pineapple, and sliced avocado. Be sure to top with fresh cilantro, too, for some added flavor and nutrition! Enjoy!

Ingredients

  • Tortillas of choice
  • Kite Hill Chive Cream Cheese, or whatever you prefer
  • Greens of choice
  • Red cabbage
  • Chopped pineapple
  • Chicken
  • Avocado
  • Fresh cilantro

Instructions

  1. Start by cooking the chicken as normal.
  2. While the chicken is cooking, wash and chop the cabbage and sauté it in a pan on the stove for about 5-10 mins. Or you could eat it raw if you prefer!
  3. Cut pineapple into small, bite-size pieces.
  4. Once the chicken and cabbage are cooked, warm up the tortillas on the stove – this only takes about 2 mins.
  5. Now time to assemble – in a warmed tortilla, spread the chive cream cheese, and add the greens, cabbage, chopped chicken, chopped pineapple, avocado, and top with fresh cilantro!
