Tuscan Coconut Chicken

An easy, healthy chicken recipe to start your new year off right!

- 2 lbs. of chicken – thighs or breasts
- 1 tbsp healthy oil for cooking (or as much as you need)
- 1 tsp oregano
- 1 tsp thyme
- 4 cloves garlic
- Salt + pepper to taste
- 1 heaping cup halved cherry tomatoes
- 1 large handful arugula
- 1 cup of coconut milk
- Fresh parsley, if desired
- Add cooking oil to the pan and turn on medium. Once hot, add chicken.
- Add salt, pepper, oregano, and thyme to chicken.
- Cook both sides for about 5-7 mins or until a light golden brown.
- Take chicken off the pan and set aside.
- Turn stove to low and add garlic. Mix gently until fragrant, about 1 minute.
- Add halved cherry tomatoes, turn the temp back up to medium. Mix gently for several minutes until tomatoes are bursting.
- Add arugula and mix gently until wilted.
- Add coconut milk, mix together, then add the chicken into the pan again.
- Place the top on the pan and cook for another 5 mins or so or until the chicken is thoroughly cooked.
- Serve with fresh parsley if desired.
