An easy, healthy chicken recipe to start your new year off right!


  • 2 lbs. of chicken – thighs or breasts
  • 1 tbsp healthy oil for cooking (or as much as you need)
  • 1 tsp oregano
  • 1 tsp thyme
  • 4 cloves garlic
  • Salt + pepper to taste
  • 1 heaping cup halved cherry tomatoes
  • 1 large handful arugula
  • 1 cup of coconut milk
  • Fresh parsley, if desired


  1. Add cooking oil to the pan and turn on medium. Once hot, add chicken.
  2. Add salt, pepper, oregano, and thyme to chicken.
  3. Cook both sides for about 5-7 mins or until a light golden brown.
  4. Take chicken off the pan and set aside.
  5. Turn stove to low and add garlic. Mix gently until fragrant, about 1 minute.
  6. Add halved cherry tomatoes, turn the temp back up to medium. Mix gently for several minutes until tomatoes are bursting.
  7. Add arugula and mix gently until wilted.
  8. Add coconut milk, mix together, then add the chicken into the pan again.
  9. Place the top on the pan and cook for another 5 mins or so or until the chicken is thoroughly cooked.
  10. Serve with fresh parsley if desired.
