A refreshing afternoon treat or dessert that’s gluten-free, dairy-free, refined sugar-free and bursting with delicious strawberry flavor.

Ingredients

2 cup oats
1 cup almond butter (or other nut/seed butter of choice)
1/4 cup maple syrup
1/2 cup coconut oil, melted
2 tsp cinnamon
1 tsp vanilla extract
1 lb carton of strawberries
Instructions
Combine all ingredients (except for strawberries) into a bowl and mix together very thoroughly.
Line an 8×8 pan with parchment paper and place half the mix in the pan to form a bottom “crust.” Put in freezer.
While that is freezing, wash/cut strawberries and cook on a pan on the stove for about 10 mins at medium heat while mixing it around so nothing gets stuck. Let the strawberries get mushy like jam.
Take pan out of the freezer and spread mashed strawberries over frozen oats.
Put back into the freezer to let the mashed strawberries freeze a bit (at least 30 mins – makes it easier to spread top layer of oats on).
Put the second half of the oat mixture over the strawberries as a top layer (it’s easier to do this with your hands and push it out).
