These tasty lemon coconut ginger balls don’t even require an oven! Raw, vegan, no-bake balls bursting with light, refreshing flavors.

Ingredients

1 1/4 cup raw macadamia nuts
1/2 cup coconut oil
1/2 cup coconut flakes
2 medjool dates (pitted)
1 tbsp chopped ginger
Juice and shavings of one small/medium lemon
Instructions
Put raw macadamia nuts in food processor (no soaking required) and blend until creamy.
Then add the rest of the ingredients and blend until combined.
Form to make balls (it will still be pretty wet).
Dip in extra coconut flakes, lemon shavings or other toppings if desired.
Put in freezer for 15 mins, then transfer and store in fridge (can also store in freezer, but the fridge keeps it the perfect moist consistency in my opinion).
