These coconut macadamia cookies are refreshing and light and only made with healthy, clean ingredients.

Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut flakes (+ more for topping)
  • 1/2 cup chopped macadamia nuts
  • 2 medium ripe bananas mashed
  • 2 tbsp coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1 tbsp ghee

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a bowl.
  3. Scoop into cookies and place on a parchment paper-lined baking sheet. Push each cookie down slightly using a fork or the palm of your hand.
  4. Top each cookie with a hefty dose of coconut flakes. Feel free to use as much as you want!
  5. Bake for 10 mins.
  6. Let cool and enjoy!
