Do you ever just want ONE warm homemade cookie at the end of the day? Sometimes making a dozen sounds amazing, but also sometimes it’s just not needed! So here’s a simple single-serving vegan chocolate chip recipe for when you just need that one special cookie to wind down.
This recipe is really easy and gluten-free, dairy-free, and refined sugar-free, as well as vegan! So it can pretty much suit anyone.
If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free/vegan, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.
Ingredients for Single Serving Vegan Chocolate Chip Cookie:
- Almond flour
- Baking powder
- Almond butter or any nut butter of choice – I used Whole Foods organic almond butter
- Vanilla extract
- Maple syrup
- Chocolate chips
How to Make Single Serving Vegan Chocolate Chip Cookie:
This is only 6 simple ingredients so it isn’t hard to make at all! Start by preheating the oven and then mixing all of the ingredients together in a bowl.
Form the mix into one cookie and lay on a parchment paper-lined pan. Bake in the oven, let cool and enjoy!

Instructions
