These are absolutely delicious, made with healthy ingredients, and has the best fluffy texture!
My new obsession are these strawberry chocolate chip muffins. They’re so flavorful, so fluffy, so moist and so delicious! And now that strawberry season is approaching us fast, I’m all aboard the strawberry train and I won’t be getting off any time soon.
These yummy muffins are gluten-free, dairy-free and refined sugar-free and made only clean, healthy ingredients.
For the first time ever, I used avocado oil in this recipe and WOW I’m impressed. Avocado oil is such a healthy, versatile oil and has a naturally mild flavor, so I promise these muffins don’t taste like avocado. They turned out amazing and I’m hoping to add avocado oil to more recipes in the future!
Just take a peek at the texture! So incredible.
Ingredient for Strawberry Chocolate Chip Muffins:
- Eggs
- Maple syrup
- Avocado oil
- Vanilla extract
- Almond flour
- Baking soda
- Strawberries
- Chocolate chips
If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.
How to Make Strawberry Chocolate Chip Muffins:
They are so simple to make! Start by preheating the oven and greasing a muffin pan with coconut oil or other healthy oil of choice (or use liners).
Then mix all of the wet ingredients into a bowl. Then add the dry ingredients, except for the strawberries. Mix everything together. Then when everything is mixed, add the strawberries and mix it gently together with a spoon.
Then add the muffin mix to the pan and top with additional strawberries or chocolate chips if desired. I decided to add on a little strawberry heart to a few of them just for fun!
Bake in the oven, let cool and enjoy!
