Seeing a bunch of overripe bananas on your counter is really a wonderful feeling – it always means time for banana bread! But this time I had an overabundance of blueberries and threw them into the mix. I ended up making this Banana Blueberry Bread and it was a delicious combo.

This treat is incredibly easy to make since it’s only 6 ingredients and so healthy and clean, too. Like most of my recipes, this is gluten-free, dairy-free, and refined sugar-free. This yummy bread is only sweetened with bananas, blueberries, and a little bit of maple syrup.

Because there’s quite a bit of banana in this recipe, if you don’t let it cool it will stay a little mushy and gooey. Honestly, I don’t mind (don’t worry the eggs are all cooked – totally healthy to eat!). But if you want it to harden up, you have to let the loaf cool completely.

Ingredients for Blueberry Banana Bread:

  • Ripe bananas
  • Oat flour
  • Maple syrup
  • Eggs
  • Baking soda
  • Blueberries

That’s all you need! So simple and healthy.

How to Make Blueberry Banana Bread:

You don’t have to put much effort into making this recipe! Preheat your oven to 350°F and grease a 9″ x 5″ loaf pan with coconut oil or another healthy non-stick oil.

First, start by mashing your bananas and adding them to a medium bowl. Then add the rest of the ingredients, except for blueberries, and mix together well.

Now add the blueberries to the batter and mix around gently one more time. Note, I also saved a few of these blueberries to the side to add to the top of the batter once I poured it into the pan.

Add the batter to the loaf pan and place it in the oven (also place more blueberries on top if desired). Let bake and enjoy! Be sure to let it cool completely if you want the mashed banana to try and “harden” up. If you don’t mind a bunch of gooeyness, then dig in.

Ingredients

Scale
  • 4 small/medium ripe bananas, mashed
  • 2 cups oat flour
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 3/4 cup blueberries

Instructions

  1. Preheat oven to 350°F and grease a 9″ x 5″ loaf pan with coconut oil or other non-stick oil.
  2. Mash bananas and add to a medium bowl.
  3. Mix the rest of the ingredients together in a bowl, except for blueberries.
  4. Finally, gently mix in the blueberries and pour into a loaf pan. I saved a few blueberries to add on top once the mix was in the pan.
  5. Bake for about 30 mins or until a toothpick comes out clean.
  6. Enjoy!
