There’s nothing worse than having to run out to the grocery store to pick up 267 different ingredients just to make some dang cookies.
These beautiful bites of gold are naturally gluten-free, dairy-free, refined sugar-free, and flourless! The ingredients are simple and wholesome. You can even make this vegan if you want by subbing the egg for a chia egg, although they are a little bit softer this way.
If you’ve never made a chia egg, all you have to do is mix 1 tbsp chia seeds + 2.5 tbsp water. Stir together and let sit for 5 mins. It should start to thicken and be gel-like.
If you want to ensure the recipe is gluten-free/dairy-free/refined sugar-free, make sure you choose the appropriate chocolate chips! The ones I used in this recipe were the Enjoy Life Foods Dark Chocolate Chips which are dairy-free/gluten-free/vegan but do have some cane sugar. These Lily’s Dark Chocolate Chips are refined sugar-free.

Wow, these are incredible. I’ve made them half a dozen times already, My kids even made them for me at my request for Mothers Day. They are so satisfying, I don’t even miss the Nestle recipe I used before for I tried this one. They are sweet and satisfying and you still feel good after eating them! They are a one bowl recipe which is always nice. I love that you can use basically any kind of nut butter and chocolate chips or carob chips. They are good hot but even better cool, a pleasurable treat for days. I just came to print out the recipe so I always have it handy.
