These are one of my favorite desserts I’ve ever made and huge favorite with my husband Cole and his coworkers as well! Out of all the food I bring them (I bring them sooooo much food), this was specifically requested for a birthday so I’m going to say these are pretty good.

What’s amazing about these brownies is the texture. Because it’s made with sweet potato, it stays incredibly fudgy and soft, so if that’s your thing then you’re going to be in heaven.

I mean….look at how good that looks! Texture on point!

Just bake a sweet potato in the oven before you make this and then the prep time is very minimal – only around 10 mins. I usually bake my sweet potato the night before, or I just bake a bunch at once and keep them in the fridge. I always choose to bake with a Japanese sweet potato because they’re creamier and sweeter, but you can also use a regular garnet sweet potato if you prefer.

Not to mention the addition of the sweet potato adds a little extra fiber and nutrients, so it’s a win-win!

I love to top my sweets, especially these brownies, with a little bit of coarse sea salt. It makes for a perfect sweet + salty combo!

These sweet potato fudge brownies are gluten-free, dairy-free and refined sugar-free and are made with simple, clean ingredients! If you specifically want to avoid dairy and refined sugar, be sure to choose chocolate chips that follow these guidelines, like Lily’s Dark Chocolate Chips. However, my personal favorite are Enjoy Life Foods Dark Chocolate Chips which are dairy-free, but they still do have cane sugar as a sweetener. Totally up to you!

Ingredients for Sweet Potato Fudge Brownies:

  • Almond flour
  • Mashed Japanese sweet potato
  • Eggs
  • Coconut sugar
  • Cacao powder
  • Baking soda
  • Sea salt
  • Chocolate chips
  • For topping, if desired: additional chocolate chips and coarse sea salt.

How to Make Sweet Potato Fudge Brownies:

Start by preheating your oven and then mixing all of the ingredients into a bowl.

Line an 8″ x 8″ pan with parchment paper and pour the mix into the pan.

Bake in the oven, but halfway through top the brownie mix with additional chocolate chips (as many as you prefer) and some coarse sea salt (or Himalayan pink salt) if desired, but I highly recommend! It really adds a little extra amazing flavor.

Ingredients

Scale
  • 1.5 cups almond flour
  • 1.5 cups mashed japanese sweet potato
  • 3 eggs
  • 3/4 cup coconut sugar
  • 3 tbsp cacao powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • Heaping 1/2 cup chocolate chips
  • Optional for topping: additional chocolate chips and coarse salt

Instructions

  1. Preheat the oven to 350°F.
  2. Mix ingredients together in a bowl and pour into a parchment paper-lined 8″ x 8″ pan.
  3. Bake for 30 mins, but halfway through cooking top the brownie mix with additional chocolate chips and coarse sea salt if desired.
  4. Let cool and enjoy!
