These easy roasted carrots are such a healthy and simple side dish to any meal. Although it takes quite a bit of time in the oven, the prep is easy and doesn’t take too much time at all.

This is also a great dish to meal prep to have for lunch and dinner throughout the week. When I made these, I cut up the extras and just ate them cold in salads and I thought it was delicious!

What adds a little flavor to these carrots is roasting them in avocado oil or olive oil, balsamic vinegar, and spices. I choose to use avocado oil instead of olive oil and let me talk about why…

Why I Love Avocado Oil

Different oils have different smoke points – the point at which they begin to burn, smoke and oxidize. When oxidation happens, this creates free radicals and can damage your cells and DNA, causing harm to your body.

Avocado oil has a smoke point of 520°F, whereas olive oil has a smoke point of around 325°F – 375°F. Therefore, avocado oil can be safely cooked at higher temperatures.

But whether you want to use avocado oil or olive oil is up to you! However, I definitely recommend having avocado oil in your pantry because it’s such a versatile oil. This is the avocado oil that I always have in my pantry at all times. And here’s a spray version as well! This specific spray oil doesn’t use any additives or chemical propellants like most of the spray oils on the market!

Ingredients for Easy Roasted Carrots:

  • Carrots
  • Avocado oil or olive oil
  • Balsamic vinegar
  • Spices: sea salt, black pepper, thyme, and garlic powder
  • Parsley (optional)

How to Make Easy Roasted Carrots:

Start by preheating the oven and washing and peeling the carrots so they’re all clean and ready to go. I used almost an entire 1 lb bag of carrots.

Lay the carrots on a parchment paper-lined pan and coat carrots with avocado oil (or olive oil) and balsamic vinegar at a 1:1 ratio. I used about 1 tbsp of each.

Then generously top the carrots with all of the spices!

Bake in the oven, and then top with fresh parsley if desired. Enjoy!

Ingredients

  • Carrots
  • Avocado oil or olive oil
  • Balsamic vinegar
  • Sea salt
  • Black pepper
  • Thyme
  • Garlic powder
  • Parsley (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and peel the carrots and lay them on a parchment paper-lined pan.
  3. Coat carrots with avocado oil (or olive oil) and balsamic vinegar using a 1:1 ratio.
  4. Top carrots generously with all the spices.
  5. Bake for about 50 mins, depending on how thick the carrots are and how cooked/soft you want them.
  6. Top with fresh parsley and enjoy!
