The perfect yummy appetizer to bring to your next holiday party!
Are you on appetizer duty for a holiday party this year? Or better yet, are you hosting and don’t know what to serve before the main meal?! These cute little sweet potato holiday toasts are one of my favorite festive appetizers. They’re healthy and always a big hit! They’re really easy to make, too.
I love to do a mix of Japanese sweet potatoes and Garnet sweet potatoes for this appetizer, but choose whatever you prefer!
Ingredients for Sweet Potato Holiday Toasts:
- Sweet potatoes
- Avocado oil
- Salt + pepper
- Avocado
- Olive oil
- Pomegranate seeds
- Goat cheese
- Optional: lemon for freshness!
How to Make Sweet Potato Holiday Toasts:
Start by preheating the oven and then washing and cutting the sweet potatoes into 1/4″ slices. Place the slices onto a parchment paper-lined baking sheet, coat with a little bit of avocado oil and salt and pepper.
Bake the sweet potato slices in the oven, ensuring to flip them while they’re cooking.
When the sweet potatoes are done, mash up some avocado and mix with a little bit of olive oil, salt, and pepper. You can also add lemon too to make it stay greener longer and have a fresh citrus taste. I recommend this if it will be sitting out at a party for a while.
Add a spoonful of avocado to each sweet potato round, and then add a sprinkle of goat cheese (can omit if dairy-free) and pomegranate seeds.
Serve and enjoy!
