When I was younger, I used to hate anything that was lemon flavor. I’m not sure what I was thinking honestly. Now I’m obsessed! I think my husband, Cole, helped me awaken my palate to this magical taste! That’s why I’m in love with this healthy lemon loaf! And if you want another yummy lemon treat, I also love these no-bake, vegan Lemon Coconut Ginger Balls.

The texture of this loaf is very moist and spongey and I personally really like it this way.

It’s made with really simple, healthy ingredients (gluten-free, dairy-free, refined sugar-free) so you can eat this guilt-free. I also used avocado oil in this recipe and I just love the texture that the avocado oil helps to create! It’s so delicious. And don’t worry, it doesn’t taste like avocado!

On one of the loaves, I added a fun coconut glaze on top! It’s definitely by no means a necessary step since the lemon flavor is so delicious. So you can skip it if you want to make it easier. It can also make the process take a little longer since you have to let it dry. But I’ll still provide info below if you’d like to try it!

On the other loaf I made, I topped it with shredded coconut and thin lemon slices.

Ingredients for Healthy Lemon Loaf:

  • Eggs
  • Maple syrup
  • Avocado Oil
  • Vanilla extract
  • Lemon juice – I used just a bottle of lemon juice to make it easy instead of fresh lemon
  • Lemon zest
  • Almond flour
  • Baking soda

If you’d like to add the coconut glaze, you’ll also need coconut butter and coconut sugar. This is the coconut butter I use!

How to Make Healthy Lemon Loaf:

Start by preheating the oven and lining a 9″ x 5″ loaf pan with coconut oil or another healthy non-stick oil. I’d recommend to also zest the lemons before you start mixing ingredients so they’re ready to go!

Now add the wet ingredients into a bowl and mix together. Then add the dry and mix again! Pour the mix into the loaf pan, add any toppings if desired and bake in the oven. That’s it! Then just let it cool a bit and enjoy.

If you’d like to add the coconut glaze, just mix the coconut butter (melted), coconut sugar, and lemon juice together and pour on top of the loaf when it’s out of the oven. Let it dry so it can harden – you can expedite this by putting it in the fridge since it needs to reach a cooler temperature to harden.

Ingredients

Scale
  • 3 eggs
  • 1/3 cup maple syrup
  • 1/3 cup avocado oil
  • 1/2 tsp vanilla extract
  • 1/4 cup lemon juice
  • Zest of about 2 medium lemons
  • 2.5 cups almond flour
  • 1/2 tsp baking soda

Coconut glaze (if desired):

  • 5 tbsp coconut butter
  • 1/2 tbsp coconut sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan with coconut oil or other non-stick oil
  2. Mix wet ingredients together in a bowl, then add the dry ingredients and mix again.
  3. Pour into 9” x 5” loaf pan and bake for about 30 mins or until a toothpick comes out clean.

Notes

If desired, mix together coconut glaze ingredients and pour on top of loaf. Let it dry or put it in the fridge for faster drying time. It can take a while to fully harden.
