Coconut Lime Cauliflower Rice is one of my favorite side dishes because it’s so easy and also feels so refreshing once it starts to get a bit sunny and warmer. It can go with anything, but I love to pair it with a wild salmon filet topped with grilled pineapple and ginger as pictured. It’s seriously the perfect combo!

In this recipe, you can use fresh or frozen cauliflower rice, but I always use frozen. I ALWAYS have frozen cauliflower rice in my fridge at all times, just in case. It’s such an easy and efficient way to get in some veggies!

Ingredients for Coconut Lime Cauliflower Rice:

  • Cauliflower rice (fresh or frozen, but I always use frozen)
  • Coconut milk
  • Lime
  • Sea salt

It’s only a few ingredients and it’s possible you might already have all of the items in your kitchen already!

How to Make Coconut Lime Cauliflower Rice:

First, add cauliflower rice and coconut milk to a large pan. Cook together on the stove until all of the coconut milk is soaked up and the cauliflower is cooked. This should take anywhere from 5-10 minutes.

Then just add some fresh lime juice, lime shavings, and sea salt and it’s ready to go! It’s that easy!

Ingredients

  • 1 12 oz bag of cauliflower rice
  • 1 cup coconut milk
  • Juice and shavings of 1 lime
  • Sea salt

Instructions

  1. Add cauliflower rice and coconut milk to a large pan.
  2. Cook until the coconut milk is soaked up and the cauliflower is cooked. This usually takes about 5-10 mins.
  3. Add lime juice, lime shavings and sea salt, mix together, and enjoy.
