Looking for a more interesting way to eat your veggies? Then check out this healthy cauliflower fried rice! A huge bowl of wholesome veggies made more appetizing by egg, garlic, ginger, coconut aminos, and some spices!

Personally, I choose not to eat soy as I feel like it doesn’t go well with my body. That’s why I always use coconut aminos instead. It’s made with coconut tree sap and sea salt – that’s it. If you haven’t heard of it, it may sound a little weird, but it’s a wonderful soy sauce replacement! I personally think it tastes amazing (it doesn’t taste like coconut). It’s also naturally gluten-free and way lower in sodium than soy sauce. This is the coconut aminos I use.

This recipe is simple to make, too!

Ingredients for Healthy Cauliflower Fried Rice:

  • Veggies: frozen cauliflower rice, broccoli, carrots, onion
  • Avocado oil
  • Minced fresh garlic
  • Minced fresh ginger
  • Coconut aminos
  • Eggs
  • Salt + pepper
  • Optional toppings: green onions and avocado

How to Make Healthy Cauliflower Fried Rice:

Start by washing and chopping up all your veggies so they’re ready to go, and mince the ginger and garlic. Of course, you can use any veggies you prefer if you’d like something different!

Add the avocado oil, garlic, ginger and onion to a large pan and cook on low on the stove for about a minute or two. Then add the frozen (or fresh!) cauliflower rice and carrots, turn up the heat a bit and mix occasionally. Cook for about 3 minutes.

Add broccoli and continue to cook for about 5 minutes.

Add the eggs and the coconut aminos and mix around thoroughly until the eggs are cooked through and mixed in. Feel free to add any other spices or seasoning if you want! This dish would also be delicious if you add some heat or spice!

Serve and top with green onion and avocado if desired!

Ingredients

  • 1 tbsp avocado oil or other healthy oil
  • 1 cup chopped broccoli
  • 3/4 cup chopped carrots
  • 1/4 cup chopped onion
  • 1 tsp minced fresh garlic – about 1 clove
  • 1/2 tsp minced fresh ginger
  • 1 12 oz bag frozen cauliflower rice
  • 1 tbsp coconut aminos
  • 2 eggs
  • Salt and pepper to taste
  • Toppings if desired: green onion and avocado

Instructions

  1. Wash and chop up veggies and mince garlic + ginger so everything is ready to go.

  3. Then add cauliflower rice and carrots, turn up the heat a bit and mix occasionally. Cook for about 3 minutes.
  4. Add broccoli and continue to cook for about another 5 minutes.
  5. Add the eggs and the coconut aminos and mix around until the eggs are mixed in and fully cooked.
  6. Serve and top with green onion and avocado if desired.

Notes

This makes enough for 1 large bowl or 2 smaller servings. Since it’s so many veggies, it’s very filling!
