Ingredients for Tuscan Coconut Chicken:

  • Chicken – I used chicken thighs but breasts are great, too
  • Healthy oil for cooking – avocado oil, butter/ghee, olive oil, etc.
  • Oregano
  • Thyme
  • Garlic cloves
  • Salt + pepper to taste
  • Cherry tomatoes
  • Arugala
  • Coconut milk
  • Fresh parsley, if desired

How to Make Tuscan Coconut Chicken:

Start by adding the cooking oil to a large 12 inch pan and set the heat the medium. Once the oil is hot, add the chicken to the pan and add salt, pepper, oregano, and thyme. Cook both sides of the chicken for about 5-7 mins or so on each side, or until it’s a nice, light golden brown. Take the chicken off the pan and set them aside.

Now turn the stove heat on low and add the crushed garlic cloves and stir for 1 minute or so, or until fragrant. Add halved cherry tomatoes, turn the heat back up to medium, and stir gently until tomatoes are blistering and bursting. This usually takes several minutes. Then add the arugula and mix gently until wilted.

Finally, add the coconut milk, mix together, and add the chicken back into the pan for the final stretch! Place the top on the pan and cook for another 5 minutes or so, or until the chicken is thoroughly cooked. Top with fresh parsley if desired and serve!

Ingredients

Scale
  • 2 lbs. of chicken – thighs or breasts
  • 1 tbsp healthy oil for cooking (or as much as you need)
  • 1 tsp oregano
  • 1 tsp thyme
  • 4 cloves garlic
  • Salt + pepper to taste
  • 1 heaping cup halved cherry tomatoes
  • 1 large handful arugula
  • 1 cup of coconut milk
  • Fresh parsley, if desired

Instructions

  1. Add cooking oil to the pan and turn on medium. Once hot, add chicken.
  2. Add salt, pepper, oregano, and thyme to chicken.
  3. Cook both sides for about 5-7 mins or until a light golden brown.
  4. Take chicken off the pan and set aside.
  5. Turn stove to low and add garlic. Mix gently until fragrant, about 1 minute.
  6. Add halved cherry tomatoes, turn the temp back up to medium. Mix gently for several minutes until tomatoes are bursting.
  7. Add arugula and mix gently until wilted.
  8. Add coconut milk, mix together, then add the chicken into the pan again.
  9. Place the top on the pan and cook for another 5 mins or so or until the chicken is thoroughly cooked.
  10. Serve with fresh parsley if desired.
